2 1/4 teaspoons yeast
1/4 cup warm water
2 cups scaled milk
2 tablespoons sugar
2 teaspoons salt
1 tablespoon butter
6 cups whole wheat flour
Soften yeast in water.
In a separate bowl, mix milk, sugar, salt, and butter.
Let cool slightly.
Stir in 2 cups flour and mix well.
Add yeast and mix.
Add enough of the flour to make a moderately stiff dough.
Knead on a floured surface for 8-10 minutes.
Les rise in a warm place for 1 1/2 hours, then punch down.
Let rise for 45 minutes.
Cut in two, cover, and let rest for 10 minutes.
Put in bread plans and let rise for 1 hour.
Bake at 400 for 35 minutes.
